 Chicken Biryani Recipe


Ingredients:

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup cooking oil or ghee
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons biryani masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 1 bay leaf
  • Salt to taste
  • Saffron strands soaked in warm milk (optional, for garnish)


Instructions:

1. Rinse and Soak the Rice:

  •    Rinse the basmati rice under cold water until the water runs clear.
  •    Soak the rice in water for 30 minutes.

2. Prepare Marinade:

  •    In a bowl, mix yogurt, biryani masala, red chili powder, turmeric powder, and salt.
  •    Add chicken pieces to the marinade and let it sit for at least 30 minutes.

3. Fry Onions:

  •    Heat oil in a pan, add sliced onions and fry until golden brown.
  •    Remove half of the fried onions for layering.

4. Cook Chicken:

  •    In the same pan, add ginger-garlic paste and cook until the raw smell disappears.
  •    Add marinated chicken and cook until it's partially cooked.
  •    Add chopped tomatoes and cook until chicken is tender.

5. Cook Rice:

  •    Boil the soaked rice in a large pot of water until 70-80% cooked.
  •    Drain the rice.

6. Layering:

  •    In a heavy-bottomed pot, layer half of the partially cooked rice.
  •    Add the cooked chicken mixture on top of the rice.
  •    Sprinkle chopped mint and coriander leaves.
  •    Add the remaining rice on top.
  •    Drizzle saffron-soaked milk and the reserved fried onions.

7. Dum Cooking:

  •    Cover the pot with a tight-fitting lid.
  •    Cook on low heat for 20-25 minutes to allow the flavors to meld.

Covered pot, biryani cooking on low flame.


8. Serve:

  •    Gently fluff the rice with a fork.
  •    Serve hot with raita or yogurt on the side.
